Main Description: Beher’s ibérico ham is as close as it gets to enjoying tapas in a Madrid wine bar. Sometimes called “pata negra” or “black label,” this is 100% Ibérico de Bellota—the most limited tier and highest standard of jamón. This designation is reserved for a tiny fraction of all ibérico hams produced in Spain. Beher deals only in 100% acorn-fed ibérico pigs—no crossbreeds, ever—that roam freely across over 4,900 acres of farmland. The pigs’ acorn-rich diet and free-range lifestyle gives the ham a rich, intensely nutty flavor and a silky texture marbled with tender, succulent fat. Each ham is dry-cured for four years high in the mountains of Guijuelo, Spain, to develop its flavor (and naturally preserve the meat). Then, to ensure it arrives to you as fresh as possible, the hams are shipped stateside and knife-cut to order by a master cortador. (Hand-sliced ibérico is superior in both texture and flavor to machine-cut, but you need a special knife to do it and the technique is not easy to learn—which is why Beher leaves nothing up to chance.) You’ll get masterfully sliced, real-deal ibérico, vacuum-sealed and delivered straight to your door. All it needs is some good bread, a little manchego, a drizzle of olive oil and a glass of Spanish wine.
