Caramelo Tortillas x Milk Street Box

Caramelo tortillas are the only ones Chris Kimball eats at home—and once you try them, you’ll see why. Paper-thin yet resilient, chewy yet tender and almost impossibly flavorful, these are Sonora-style flour tortillas at their best. Famous in Northern Mexico, Sonoran tortillas use just four ingredients—flour, water, fat and salt—and are leavened only by steam from the dough’s water content, rather than the baking soda that’s often used by run-of-the-mill brands. Skipping chemical leavening agents makes the tortillas chewy and stretchy rather than puffy and airy, which allows them to accommodate lots of filling without ripping or leaking. Caramelo designed their entire manufacturing process around that texture; their custom equipment and tight temperature control are calibrated to produce gauzy, almost translucently thin tortillas, every time. Plus, the minimal ingredients list lets the flavor of the fat shine through—these tortillas aren’t a mere vehicle for toppings, they’re the star of the show. Their Pork Fat tortillas use fat from humanely-raised pigs, which lends a deep savoriness and slight sweetness; the Avocado Oil tortillas are rich, buttery and fully vegan.
